Located at 1801 Collins Avenue, Pauline reads as a love letter to the coast: precise technique paired with sunlit, transportive flavors drawn from the Caribbean and Latin America. Led by Culinary Director Abram Bissell - a Florida Keys native who has led the celebrated, Michelin-starred kitchens of The Modern, NoMad, and Eleven Madison Park—the menu is confidently seafood-forward, built around pristine ingredients and clarity of execution.

The raw bar takes a more expressive approach than traditional, featuring Jonah crab claws, conch ceviche, and Key West pink shrimp; from there, small plates like rock shrimp fideos and caviar tostada lead into signature entrées including lobster and mussel sancocho and turbot encendido.
