About Restaurante Marcano

David Marcano does not require presentation: his fame as a breed chef precedes him. In its Marcano restaurant, located in the Retiro neighborhood, it offers a product and author's cuisine where it honors Basque haute cuisine. The restaurant's philosophy is based on a careful selection of the product, on long cooking, on an exhaustive choice of wines, and on the incorporation of elements of Asian and American cuisines as the chef's personal touch. Memorable dishes such as homemade salted Antxoas, bluefin tuna tartare, sheep's milk croquettes with Idiazabal, mixed squid in their ink with hake loin, jar with truffle potato cream, corvina acevichada with its sweet potato and its court or the tuna bite with hedgehog. Marcano embroiders the spoon dishes, present throughout the year although adapted to the climatic conditions, and has a special interest in vegetables, never absent and following the seasonality. Most dishes are served in half portions and almost all of the menu is suitable for coeliacs. In Marcano the diner will find a close speech that translates into an understandable, tasty and high quality cuisine.
