Why We Like It
The focus here is lovingly placed on heirloom corn masa, which chef Olivia López turns into tacos, sopes, and tamales. You may remember Olōyō from their wildly popular pop-up — we thought it was peak, but having more room to grow and experiment has only made them even better.
About Olōyō
Molino Olōyō is a modern Mexican culinary brand founded by James Beard semifinalist Chef Olivia López and Jonathan Percival, rooted in heirloom corn, regenerative agriculture and the traditions of Mexican gastronomy. What began as a cult-favorite pop-up has evolved into a nationally recognized concept, earning inclusion in Texas Monthly’s Top 50 Tacos. In Spring 2026, Molino Olōyō will open its first brick-and-mortar concept, Olōyō, in Old East Dallas, offering an intimate, seasonal-driven dining experience centered on sustainability and craft. Olōyō will be located at 4422 Gaston Ave, Dallas, TX 75246. Follow us along at @oloyo_dtx.
